Jamie Collins


Before taking the plunge with Diggle Lock, Jamie honed his craft locally, both at Muse, and as Head Chef at Dinnerstone in Uppermill before moving to the Science and Industry Museum in Manchester. Apart from food, his hobbies are family, football and adding to his trainer collection.

Alex Holt

Head Chef

Alex is another team member that served his time locally. His fine cooking skills and considerable knowledge of British and European cuisine bring flair and creativity to our menu. His hobbies include eating out, mountain biking and spending time with his two girls.

Joe Coop


Joe previously worked at the Saddleworth Hotel and Muse restaurant in Uppermill. He's a chef with a passion for creating amazing food from simple fresh ingredients. When he's not making his magic in the kitchen, his other love is music and Joe has been spotted gigging as a DJ.

Samedi Kirkbride

Front of House

Samedi is our Front of House teamleader. He previously worked at several well established local bars and restaurants. Samedi is a passionate coffee geek and a trained barman - no wonder he makes a mean Espresso Martini. You will most often find him as the first face you see when you arrive and you'll hear him singing his way through service.
